vegan rice pudding!
i came up with a super easy/fast way to make vegan rice pudding! i use the boxed goya flan mixes (i don’t use the caramel that comes with it – though) and i prepare it according to the box, substituting the milk with plain soy milk. instead of putting the completed mixture into molds, i put it in a big bowl, add cooked brown rice, some vanilla and cinnamon. i added the raisins before hand on the batch – but the raisins swelled up more than i would like them to, so the next time i make them, i will add the raisins right before i eat it. seriously, the whole time for making this is (TOPS) 20 minutes and it is so delicious. i know this is going to become a favorite of mine, so i will include pictures soon.
